I love it to collect easy Christmas cookie recipes that even kids (with adult supervision, preferably) can concoct.
Easy Christmas Cookie Recipe Number 1
It is adapted from Christmas-Cookies.com. They’re cornflakes coated with marshmallow. I like it that they’re green and red and looking verrryyy merry.
Holly Cookies
Ingredients
½ cup butter
3 cups miniature marshmallows
½ teaspoon almond extract
1 tespoon green food color
4 cups cornflakes
red hot candies
Preparation
Melt butter, add marshmallows, stirring until all marshmallows are melted. Add extracts and food coloring; stir until it is a uniform green color.
When mixture is smooth, add cornflakes; mix well but gently so as not to crush the cornflakes. Form into 3” mounds on sheets on sheets of waxed paper, decorate with red cinnamon candies and silver dragées. Let cool.

Easy Christmas Cookie Recipes Number 2
This one is adapted from Linda Larsen (About.com).
Skinny Mint Cookies
Ingredients
2 cups semisweet chocolate chips
2 cups milk chocolate chips
20 unwrapped Andes after-dinner mints
1/8 teaspoon peppermint extract
1 (9-ounce) package plain chocolate wafer cookies
Preparation
In medium microwave-safe bowl, combine semisweet chocolate chips and milk chocolate chips. Microwave on high power for 1 minute; remove and stir.
Return to microwave and cook on 50% power for 1 minute longer; remove and stir. Contunue microwaving at 50% power and stirring until chips are melted and mixture is smooth.
Remove from microwave and stir in chocolate mints until smooth. Add peppermint extract and stir until combined.
Dip the cookies, one at a time, into the chocolate mixture. Gently shake off excess chocolate and place on waxed paper to cool and set. Store in cool place.

Grandma’s Corn Flake Peanut Butter Cookies
Ingredients
½ cup white sugar
½ cup light corn syrup
2 tablespoons butter
½ cup peanut butter
3 cups cornflakes
Preparation
Line a baking sheet with waxed paper. Bring the sugar and corn syrup to a boil in a saucepan over medium heat’ stir in butter and peanut butter until thoroughly mixed, and remove from heat.
Place the cornflakes into a large bowl, and pour the peanut butter mixture over the ceareal. Mix until the cornflakes are coated with the mixture. Drop by tablespoon onto the waxed paper; flatten slightly if desired.
