Easy Christmas Cookie Recipe Number 1

It is adapted from Christmas-Cookies.com. They’re cornflakes coated with marshmallow. I like it that they’re green and red and looking verrryyy merry.

Holly Cookies 

Ingredients

            ½ cup butter

            3 cups miniature marshmallows

            ½ teaspoon almond extract

            1 tespoon green food color

            4 cups cornflakes

            red hot candies

Preparation

Melt butter, add marshmallows, stirring until all marshmallows are melted. Add extracts and food coloring; stir until it is a uniform green color.

When mixture is smooth, add cornflakes; mix well but gently so as not to crush the cornflakes. Form into 3” mounds on sheets on sheets of waxed paper, decorate with red cinnamon candies and silver dragées. Let cool.

Easy Christmas Cookie Recipes Number 2

This one is adapted from Linda Larsen (About.com).

Skinny Mint Cookies

Ingredients

            2 cups semisweet chocolate chips

            2 cups milk chocolate chips

            20 unwrapped Andes after-dinner mints

            1/8 teaspoon peppermint extract

            1 (9-ounce) package plain chocolate wafer cookies

Preparation

In medium microwave-safe bowl, combine semisweet chocolate chips and milk chocolate chips. Microwave on high power for 1 minute; remove and stir.

Return to microwave and cook on 50% power for 1 minute longer; remove and stir. Contunue microwaving at 50% power and stirring until chips are melted and mixture is smooth.

Remove from microwave and stir in chocolate mints until smooth. Add peppermint extract and stir until combined.          

Dip the cookies, one at a time, into the chocolate mixture. Gently shake off excess chocolate and place on waxed paper to cool  and set. Store in cool place.

It is adapted from Nana’s 3 Babies (AllRecipes.com).

Grandma’s Corn Flake Peanut Butter Cookies

Ingredients

            ½ cup white sugar

            ½ cup light corn syrup

            2 tablespoons butter

            ½ cup peanut butter

            3 cups cornflakes

Preparation   

Line a baking sheet with waxed paper. Bring the sugar and corn syrup to a boil in a saucepan over medium heat’ stir in butter and peanut butter until thoroughly mixed, and remove from heat.   

Place the cornflakes into a large bowl, and pour the peanut butter mixture over the ceareal. Mix until the cornflakes are coated with the mixture. Drop by tablespoon onto the waxed paper; flatten slightly if desired.

Christmas Cookie Recipe Number One is adapted from Diana Rattray (About.com).

             Christmas Hazelnut Drop Cookies

Ingredients

½ cup butter, room temperature
¼ teaspoon salt

1 cup granulated sugar

1 egg, unbeaten

1 teaspoon vanilla extract

2 squares semisweet chocolate, melted

1 cup all-purpose flour, stir before measuring

½ cup finely chopped hazelnuts (other chopped nuts may be substituted)

Preparation

Preheat oven to 325°F.

Cream butter until light and fluffy. Gradually beat in salt and sugar. Add egg; beat well. Blend vanilla and chocolate. Mix in flour then chopped hazelnuts, mixing until well-blended.

Drop level tablespoonfuls of dough, 2 inches apart, onto greased cookie sheets. Stamp lightly with a flat bottom glass covered with a damp cloth. If desired, sprinkle more finely chopped hazelnuts over the top of each cookie. Bake for about 15 minutes, until done.

This Christmas Cookie Recipe makes about 2-3 dozen chocolate hazelnut bites.

Christmas Cookie Recipe Number Two is adapted from Stephanie Jaworski (JoyofBaking.com).

Candy Cane Cookies

Ingredients

2½ cups (325 grams) all-purpose flour

¼ teaspoon salt

1 cup (227 grams) unsalted butter, room temperature

1 cup (120 grams) confectioners sugar

2 large egg yolk

1 teaspoon pure vanilla extract

½ teaspoon pure almond extract

½ teaspoon red liquid food coloring

Preparation

In a bowl, whisk flour with salt.

In another bowl, beat butter and sugar until creamy. Add egg yolk, vanilla and almond extracts. Beat until combined. Scrape down sides of the bowl as needed. Add flour mixture, in three additions; beat until you have a smooth dough.

Remove half the dough from mixing bowl. To remaining half, add red food coloring and beat on low speed until well-blended. If you find the dough too soft, cover and refrigerate for 30-60 minutes.

Take a walnut-sized piece of red dough and a walnut-sized piece of white dough. Separately, roll each color on a lightly floured surface, into a 4-5 inch long rope.

Place the two ropes side by side, gently press together, and twist the two ropes to form a spiral. Place cookies on a parchment-lined baking sheet, spacing cookies about 2 inches apart. Shape each cookie into a cane shape by bending one end into a hook shape.

Preheat oven to 325°F and place rack in center of oven.

Bake cookies for about 8-10 minutes or until set and the edges of the cookies are just starting to brown. Remove from oven and let cookies cool completely on baking sheet. Cover and store in an airtight container for about a week.

One of my personal favorite quotes about Christmas is “Peace on earth will come to stay, When we live Christmas every day.” by Helen Steiner. This tells us that Christmas is an unique day like no other else.

On this day all the people are in harmony, all the fights between them stop and the spirit of Christmas is reborn in everyone. Helen Steiner was a religious writer, so she believed deeply in Christianity and the Christmas was the most important day to her.

But Christmas was not just a religious celebration to her- it is a day filled with hopes for better tomorrow for all the people on the planet surrounded with love and happiness.

Maybe the best quote that describes the spirit of Christmas is “Christmas gift suggestions: To your enemy, forgiveness. To an opponent, tolerance. To a friend, your heart. To a customer, service. To all, charity. To every child, a good example. To yourself, respect.” by Oren Arnold.

This is another proof that Christmas is not just an ordinary day. Everyone exchange big, beautiful gift on Christmas. But the best present you can give to a person is forgiveness, respect and love. Every person fells something different in his heart on this magical day.

In 1897, Dr. Philip O’Hanlon, asked by his then eight-year-old daughter, Virginia, whether Santa Claus really existed.

Then O’Hanlon suggested she write to the New York Sun, a major New York newspaper at that time to ensure that “If you can see in The Sun, it’s so.”

On 21 September 1897, the New York Sun ran an editorial, titled “Is There a Santa Claus?” It was inspired by the letter to the editor written by Laura Virginia O’Hanlon, who wanted to know if the jolly, chubby man in the red suit really existed.

It was The Sun editor Francis Pharcellus Church, in whose younger days as a correspondent in the American Civil War sapped him of hope and faith in society at large. Despite the dispiritedness, he would manage to run a fitting reply in the paper that would become one of the world’s most famous Christmas quotes.

And Church’s message to Little Miss O’Hanlon was the declarative that would fill the hearts of people the world over.

It became one of history’s most famous Christmas quotes:

Veteran journalist Francis Pharcellus Church has become the history’s most reprinted newspaper editorial appearing in part or whole in dozens of languages, books, movies, publishing and on posters and stamps.

“DEAR EDITOR: I am 8 years old. “Some of my little friends say there is no Santa Claus.”Papa says, ‘If you see it in THE SUN it’s so.’”Please tell me the truth; is there a Santa Claus?”

“VIRGINIA, your little friends are wrong. They have been affected by the skepticism of a skeptical age. They do not believe except [what] they see. They think that nothing can be which is not comprehensible by their little minds.

Not believe in Santa Claus! You might as well not believe in fairies! You might get your papa to hire men to watch in all the chimneys on Christmas Eve to catch Santa Claus, but even if they did not see Santa Claus coming down, what would that prove?

Nobody sees Santa Claus, but that is no sign that there is no Santa Claus. The most real things in the world are those that neither children nor men can see. Did you ever see fairies dancing on the lawn? Of course not, but that’s no proof that they are not there. Nobody can conceive or imagine all the wonders there are unseen and unseeable in the world.

You may tear apart the baby’s rattle and see what makes the noise inside, but there is a veil covering the unseen world which not the strongest man, nor even the united strength of all the strongest men that ever lived, could tear apart.

Only faith, fancy, poetry, love, romance, can push aside that curtain and view and picture the supernal beauty and glory beyond. Is it all real? Ah, VIRGINIA, in all this world there is nothing else real and abiding.

No Santa Claus! Thank God! he lives, and he lives forever. A thousand years from now, Virginia, nay, ten times ten thousand years from now, he will continue to make glad the heart of childhood.”
